When I tell you that I have a great recipe for waffles with no added sugar you might think “yuck!” But let me convince you that waffles that are chock full of dates are no bland waffle. No, these waffles are when you are craving a sweet breakfast without all of the sugar. Dress them up with spices and they are perfect for Fall. Add yogurt and blueberries for a little protein. If you’re really feeling it put whipped cream on them! (I won’t tell)
Date Waffles
Ingredients:
- 2 cups of dates, pitted and chopped
- 1.5 cups boiling water
- 6 tbsp coconut oil
- 2 chia eggs or regular eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- shake of sea salt
- 1 cup whole-wheat flour
- 1/2 cup all-purpose flour
- Pour boiling water in a large bowl with the dates and cover for 30 min.
- Whisk until blended, then add coconut oil and blend ’till smooth
- Add the eggs and stir, then the baking powder and soda and salt
- Mix in the flour a half cup at a time
- Heat oven to 350°
- Heat up the waffle maker and cook according to manufacturer’s instructions
- Once the waffles are done put in the oven to crisp up for about 5 min.
- Add desired toppings and enjoy

Yum! I love fresh Medjool dates just out of the package. Even Weight Watchers counts them just as a fruit, so there’s no guilt in eating them. Wish I had a waffle maker!
