Valentine’s day means flowers, baking, and a whole lot of pink and red. But, it also means you can throw an awesome Valentine’s day party for your fellow runners complete with a Prefontaine shrine. If you’re not in the mood for a party, maybe one of the recipes or puns intrigues you instead?
We all know this is the most important part of the party because you don’t want your guests getting “rungry.” Here are a few recipes I whipped up and are semi-healthy and vegan.
Whole-wheat Cinnamon Rolls: I adapted the recipe from Naturally Ella but used a chia egg, soy milk, and coconut oil instead. Very easy to follow but be patient because it takes about 4 hours (due to waiting). But, trust me they were well worth it because my family devoured these in two days
Cupcakes- Unfortunately no time to take a picture before they were eaten. But the recipe is super simple:
- Preheat oven to 350 degrees. Mix one box Pillsbury chocolate cake mix, 3 tbsp melted vegan butter, 1 chia egg, and 1/3 cup water.
- Pour into 12 muffin-lined tins (I like my cupcakes to be overfilled) and bake for 19-23 minutes.
- Wait for them to cool before icing and topping with sprinkles. Icing (Beat vanilla soy milk, vegan butter, and confectioners sugar until desired consistency)
Acai Bowls- People love to make their own and top with their own coconut and other ingredients. Plus the acai mixture is a glorious red, perfect for Valentine’s Day.

Heart-Shaped Pancakes- Any whole-wheat pancake mix works (I prefer Bob’s Red Mill) and pour batter into heart-shaped cookie cutters while baking to get desired effect.
Heart-Shaped Pizza- Although it was a little hard to shape into a heart, they end up looking unique since no one heart is the same! Side note: This was my first time using vegan cheese and it was absolutely disgusting (10/10 don’t recommend).
The Decorations- Decorate with valentine’s day hearts with puns such as “Your PR isn’t the only number I want” or “Heart & Sole”
Prefontaine Shrine- No runner’s valentine’s day party is complete without a poster of Prefontaine. Literally every runner’s crush and idol so why not adorn that poster with some funny valentine puns?
